TONEMADE ‘Clean’ Tacos

 Who doesn’t love a good taco? And more to the point, the little people in our lives love them too! As a solid go-to in our house hold I have tweaked our recipe and combinations along the way. That’s partly why we love them. It is a quick and easy option that works in a number of different ways.  You can also adapt the combinations to suit any particular protocol you might be following (Paleo, Keto, LCHF, GAPS).

 If you are gluten and grain free, simply make it a taco bowl. Or you could use a seed based, gluten free cracker instead. We stay away from the supermarket taco shells as they tend to have filled with sugar, additives and extracts so you probably want to steer clear.  If you can find a quality non-GMO corn chips that don’t have any nasties in them that is always a good way to go. Or there are also some great flaxseed flatbreads available that you can toast and makes into crackers too.

So what about the taco seasoning mix you can get at the supermarket? Same thing goes here with the unnecessary addition of sugar (and it is generally first on the list so it is the major ingredient), additives and extracts. Remember, if an ingredient is identified by a number it’s not really food!

Now don’t start freaking out that making your own taco seasoning mix will be a complicated nightmare and will mean you have a massive ingredients list of spices that you’ll only use once! Truth be told, to get that true Mexican flavour really isn’t that complex at all and it means simply having 2 spices in your pantry – Smoked paprika and cumin. And if it’s a hit with the family, then you’ll be using those spices again and again and again! We also add in turmeric because of the health benefits and of course we use our

Tonemade beef bone broth to add extra nutrition and flavour.  We also tend to get organic ingredients as well and it is great to see more of a variety of organic tinned beans.  Of course, if you are already a whiz in the kitchen and are soaking your own legumes and beans then use these!

So, as long as you have the main spices to make up your own seasoning mix and some of our dehydrated bone broth in your pantry it’s a super easy recipe to return to and it is always a people pleaser!

Then comes the condiments to serve it with. I have included our favourite, healthy options in this recipe version but you can mix it up however you want to.  We opt to leave out diced tomatoes as there is enough in the taco mix. One thing that is great about constructing tacos is that it means you can cater for a range of dietary requirements in the one family. Dairy free? Don’t add the yogurt or cheese.  Gluten free or avoiding maize/corn? Make it into a taco bowl.  One other thing to note about the dairy element – avoid getting pre-grated cheese. You seriously don’t even want to know what goes into them.  Best to stick with a good quality, tasty cheddar and give your biceps a work out by doing the grating yourself! Vegetarian or vegan? Simply take out the mince, bulk up the beans and use our Tonemade vegetable broth instead.

TACO MEAT

500g Beef Mince (our preferred and local supplier is Cherry Tree Organics)

400g chickpeas

400g whole tomatoes (chopped)

300ml tomato passata

3 tsp Tonemade Beef Bone Broth (reconstitute in 1 cup boiled water)

2 tsp smoked paprika

1 tsp cumin

1 onion

2 cloves garlic

CONDIMENTS

2 cucumbers (diced)

1 carrot (grated)

1 avocado (mashed)

Baby spinach leaves/Mixed lettuce leaves

Natural Yogurt or Tzatziki dip

250g grated tasty cheese

Non-GMO Corn chips/Gluten free crackers

 

METHOD

1. Heat oil in pan. Add finely diced onion and garlic and saute for 2 min

2. Add beef mince and cook until browned

3. Add salt, pepper, cumin, smoked paprika

4. Reconstitute bone broth in 1 cup boiled water, add to pan

5. Add passata, chopped tomatoes and chickpeas

6. Allow to simmer for 20 min on medium heat

7. While meat is simmering prepare your condiments – grate carrot, dice cucumbers, grate cheese

8. Place all condiments and taco meat in separate bowls for self-serving

9. Enjoy
