A great way to use any leftover or pre-prepared quinoa makes a super tasty mid-week dinner. So simple.
We always cook quinoa with some of our chicken bone broth to add to the nutrient density and make extra so we can whip up these beauties the following night. We cooked 2 cups of quinoa with 3 cups of water and 2 tsp bone broth powder. Served as a side with dinner last night and the rest into these cheesy bites of goodness. Time in the fridge overnight makes quinoa the perfect consistency for patties too!
Ingredients
3 cups of cooked quinoa
1 zucchini (grated and squeezed)
50g grated parmesan
2 spring onions (thinly sliced)
2 tsp @tone_made bone broth (chicken/beef/veg - you choose)
2 tbls gf plain flour
Salt and pepper
Instructions
1. Combine all ingredients and shape into patties.
2. Pan fry in ghee or olive oil, approximately 2min per side
3. Serve up with your favourite vegetable combination, including steamed greens as always!
